VINIFICATION
The grapes were
hand harvested with 3 weeks
maceration and wild ferment followed by ageing in tank and
French barriques.
APPEARANCE
Deep red to purple colour, bright and intense.
BOUQUET
Violet floral characters blended with some savoury and spice
notes from the barrel ageing and time on yeast lees. An
intense nose with some rich fruitcake notes also.
PALATE
Rich complex and textural showing the sensual palate that
pinot is renowned for. Black fruit along with some redcurrant
hints give a broad range of flavours. The wood, skin and seed
tannins are balanced but evident on the back palate, more
grainy than angular, and along with the acidity provide the
balance and extend the finish of the wine.
CELLARING
This wine can be enjoyed now but also has great cellaring
potential.
SERVING TEMPERATURE
Room Temperature
FOOD ACCOMPANIMENTS
The ideal partner for a number of dishes including hot ham, roast pork and those with Moroccan flavours.
